Ingredients

 
2 slices HORMEL® BLACK LABEL® Bacon
1 medium avocado, pitted and cut in half
2 eggs
3 tablespoons shredded reduced-fat cheddar cheese

Directions

  1. Heat oven to 425°F.

  2. Cook bacon according to package directions. Cool and crumble.

  3. Spoon out small scoop of avocado, leaving a 1/4-inch border. Crack eggs into avocado halves. Sprinkle with cheese and bacon.

  4. Place on baking sheet and bake 15 minutes or until egg whites are set.
