Ham Potato Pancakes are a delightful twist on a classic. This recipe combines creamy mashed potatoes, finely chopped HORMEL® CURE 81® Classic Boneless Ham, and aromatic fresh chives to create a delicious pancake batter. Perfectly cooked with a golden-brown crust, these pancakes are the perfect way to use up leftover mashed potatoes and add a touch of savory goodness to your breakfast or brunch.

Ingredients

 
1 cup mashed potatoes
1 cup milk
1 large egg, lightly beaten
1¾ cups baking mix
1 cup finely chopped HORMEL® CURE 81® Classic Boneless Ham
½ teaspoon kosher salt
4 tablespoons butter, melted
2 tablespoons chopped fresh chives

Directions

  1. In medium bowl, whisk together mashed potatoes, milk and egg. Stir in baking mix, ham and salt until just blended. Gently fold in butter and chives.

  2. Heat griddle to medium heat. Drop batter using a ¼ cup. Cook until golden brown. Flip and cook until cooked through. Serve with sour cream.
