INGREDIENTS


  • 1 pound orzo, cooked according to package directions
  • ¾ cup lemon vinaigrette
  • 1½ cups chopped PELOPONNESE® roasted sweet peppers
  • 8 ounces mozzarella cheese, preferably fresh, cut into ½-inch pieces
  • 4 cups chopped baby arugula leaves
  • 2 cups chopped radicchio
  • ½ cup HORMEL® Real Bacon Bits
  • ½ cup pine nuts, toasted

DIRECTIONS


In large bowl, combine hot orzo and vinaigrette; toss. Let stand until room temperature, stirring occasionally.  Add peppers, cheese, arugula, radicchio, bacon and toasted pine nuts to orzo mixture. Toss well.
