Pork Medallions with Sugar-Baked Onions

Ingredients:
- 1 package Hormel® Always Tender® Lemon Garlic Pork Loin Filet
- 4 tablespoons butter, divided
- 4 tablespoons light olive oil, divided
- 4 tablespoons brown sugar
- 4 small sweet yellow onions
Directions:
- Preheat oven to 400ºF
- Cut top off onions and peel leaving root end intact
- Using a small spoon or apple corer, remove core of onion to within 1/2" of bottom
- Place 1 teaspoon each butter and brown sugar in each onion
- Spray a small baking dish with cooking spray and place onions in dish
- Cover tightly with foil and place in oven
- Bake for 20 minutes or until tender
- Meanwhile, remove pork from package and cut into 1-inch medallions
- Heat remaining butter and olive oil in a skillet over medium-high heat
- Place medallions in pan and cook until browned (about 3 minutes on each side)
- Reduce heat to medium-low and continue to cook another 3 to 4 minutes or until no longer pink in the center
- SERVE WITH
dehydrated scalloped potatoes
- They can be quickly made and placed in the oven at the same time as the onions
