Bacon & Gruyère Cheese Sandwich

Ingredients:
- 1 (2.1-ounce) package HORMEL® Fully Cooked Bacon, coarsely chopped
- 8 slices pumpernickel bread
- 1 cup baby spinach, washed and dried
- 8 ounces Gruyère cheese, sliced
- Butter
Directions:
Place bacon between paper towels and place in the microwave. Microwave for 30 seconds on high or until bacon is hot and crispy. Place 4 pieces of bread on a work surface and divide the spinach among the slices of bread. Divide the cheese slices and finally the bacon among them as well. Top with remaining bread slices. Place a griddle on the stove over medium-high heat. Spread the outside of the sandwich bread with butter and place it on the hot griddle. Reduce heat to medium and while the sandwich is grilling, butter the other side of the bread. Turn when bread is well browned and continue grilling until the other side of the bread is also well browned and the cheese is melted. Cut diagonally and serve while it's hot.
SERVE WITH
a small bunch of green grapes on each plate and tall, frosty glasses of iced tea.
