Ingredients:

  • 1 (13.25oz) box rotini whole wheat pasta, prepared according to package directions
  • 1 (10oz) can Valley Fresh® White Chicken, drained
  • 1 (10oz) can mandarin oranges, drained
  • 1 cup seedless grapes, halved
  • 1 small cucumber, peeled, seeded and chopped
  • 6 green onions, sliced
  • 3/4 cup orange juice concentrate, undiluted
  • 1/4 cup white vinegar
  • 1/4 cup extra virgin olive oil

Directions:

  1. In large bowl, toss first 6 ingredients together
  2. In separate bowl, whisk together orange juice concentrate, olive oil and white vinegar
  3. Pour prepared vinaigrette over salad and toss to coat
  4. Serve immediately
