Ingredients:
- 1 (13.25oz) box rotini whole wheat pasta, prepared according to package directions
- 1 (10oz) can Valley Fresh® White Chicken, drained
- 1 (10oz) can mandarin oranges, drained
- 1 cup seedless grapes, halved
- 1 small cucumber, peeled, seeded and chopped
- 6 green onions, sliced
- 3/4 cup orange juice concentrate, undiluted
- 1/4 cup white vinegar
- 1/4 cup extra virgin olive oil
Directions:
- In large bowl, toss first 6 ingredients together
- In separate bowl, whisk together orange juice concentrate, olive oil and white vinegar
- Pour prepared vinaigrette over salad and toss to coat
- Serve immediately
