Ingredients:
- 1 can (12.5 oz) Hormel® Premium Chunk Breast of Chicken, drained
- 1 tablespoon dry taco seasoning mix
- 1 tablespoon vegetable oil
- 1/4 cup sliced green onions
- 1/2 cup sliced red onions
- 1/2 cup yellow bell pepper strips
- 1/2 cup orange bell pepper strips
- 4 6-inch flour tortillas (warmed as directed on package)
- Cilantro, if desired
Directions:
Sprinkle drained chicken chunks with 1 teaspoon taco seasoning (reserving 2 teaspoons seasoning). Set chicken aside. In 10-inch fry pan, heat oil on medium heat. Add green onions, red onions, and yellow and orange pepper strips: sprinkle with reserved 2 teaspoons taco seasoning. Stri-fry over medium heat until vegetables are crisp-tender and hot. Carefully toss in chicken chunks until heated and mix with vegetables. Spoon chicken mixture evenly (about 1/2 cups) onto each warmed flour tortilla; fold over. Garnish with fresh cilantro.
