Spicy Ham & Cheese Quesadillas

Ingredients:

  • 4 (10-inch) flour tortillas
  • 1/2 cup cream cheese, softened
  • 1 (4.25-ounce) can diced green chiles, drained
  • 1 cup shredded Monterey Jack and Cheddar cheese blend
  • 1 (16-ounce) jar CHI-CHI's® Thick 'n Chunky salsa
  • 1 (8-ounce) can crushed pineapple, well drained

Directions:

  1. Prepare grill.
  2. Spread each tortilla with 2 tablespoons cream cheese. Top 1/2 of each tortilla with 1/4 cup ham, 1/4 cup chiles and 1/4 cup shredded cheese; fold tortillas in half. Lightly coat both sides of tortillas with cooking spray.
  3. Grill quesadillas until golden brown and crisp on both sides.
  4. Meanwhile, in bowl, stir together salsa and pineapple.
  5. Cut each quesadilla into wedges; serve with pineapple salsa.
