Bacon and Egg Breakfast Biscuits

Ingredients:

  • 1 (16-ounce) can refrigerated buttermilk biscuit dough
  • 8 slices HormelĀ® Fully Cooked Bacon, crisply cooked and cut in half
  • 1 tablespoon butter or margarine
  • 8 large eggs
  • 8 (2/3-ounce) slices American pasteurized processed cheese

Directions:

  1. Bake biscuits according to package directions; keep warm.
  2. Cook bacon according to package directions.
  3. In medium skillet, melt butter over medium heat.
  4. In small bowl, combine eggs, salt and pepper; blend well. Add to skillet. Cook, stirring occasionally, until egg mixture is almost set but still moist.
  5. Split warm biscuits. Spoon egg mixture evenly onto bottom half of each biscuit. Top each with cheese, bacon and remaining biscuit half.
