1 (18.4-ounce) package HORMEL® Teriyaki Pork Tenderloin, cut into 1-inch pieces
2 tablespoons vegetable oil or wok oil
4 large carrots, peeled, cut in half and diagonally sliced into ¼-inch pieces (about 2 cups)
2 cups broccoli florets
1 medium yellow onion, thinly sliced
1 medium red bell pepper, cut into 1-inch strips
2 cups sugar snap peas
1 (14-ounce) can whole baby corn, rinsed; drained well and cut in half
½ cup bottled teriyaki stir-fry sauce

Directions

  1. Heat wok or large skillet over medium-high heat.  Add 1 tablespoon of oil to skillet.

  2. Add pork and stir fry for 5-7 minutes, until pork reaches 160°F. Remove pork from skillet and set aside to keep warm.

  3. In same skillet, in remaining oil, add carrots, broccoli and onion.  Stir-fry for 2 minutes.

  4. Add peas and pepper strips.  Sauté for an additional 2 minutes.  Return pork to skillet and add stir-fry sauce.

  5. Heat until warmed through.  Serve stir-fry over rice.  Serves 4-6.
