Ingredients
2 | cups cornmeal mix |
2 | cups buttermilk |
¾ | cup fresh corn kernels |
¼ | cup chopped green onion |
¼ | cup melted butter |
4 | slices HORMEL® BLACK LABEL® bacon, cooked and crumbled |
2 | tablespoons chipotle peppers in adobo sauce, minced |
Maple syrup, if desired | |
Garnish: cooked and crumbled HORMEL® BLACK LABEL® bacon, fresh chives |
Directions
In large bowl, combine cornmeal mix and next 6 ingredients.
Prepare griddle for medium heat. Spoon ¼ cup of mixture onto hot griddle and cook 2 to 3 minutes. Flip and cook 2 minutes.
Serve maple syrup over corn cakes. Garnish with chopped, cooked bacon, if desired.
