Ingredients

2 tablespoons oil
2 (6 to 8-ounce) filet mignon steaks
4 slices HORMEL® BLACK LABEL® Garlic Rosemary Flavored Thick Cut Bacon
Salt and freshly ground pepper
2 tablespoons butter
2 cloves garlic, lightly crushed
1 sprig rosemary

Directions

  1. Put filets on a plate and let stand at room temperature 30 minutes before cooking.

  2. Wrap two strips of bacon around each filet, keeping the bacon even with the top and bottom of each filet. Secure the bacon with wooden picks. Season generously with salt and pepper on both sides.

  3. Heat oven to 400°F.

  4. In cast iron skillet over high heat, heat oil. When oil shimmers, add steaks. Allow to sear 3 minutes on one side without disturbing. Turn steaks over. Add butter, garlic cloves and rosemary to pan. Cook 3 minutes, spooning and stirring butter and garlic over steaks to baste.

  5. Place skillet into middle of oven. Bake 3 to 5 minutes or until desired doneness. To determine doneness, insert a meat thermometer into the thickest part of the filet. The meat thermometer will read 120ºF for rare, 130ºF for medium rare, 140°F for medium, 150°F for medium well and 165°F for well done.

  6. Remove steaks from pan. Let rest 5 minutes.
