Ingredients
12 | large eggs |
2 | cups shredded Mexican cheese blend, divided |
1 | (3-ounce) jar HORMEL® Bacon Pieces |
2 | tablespoons butter or margarine |
6 | CHI-CHI’S® 8-inch Flour Tortillas |
1 | cup CHI-CHI’S® Thick & Chunky Salsa |
Directions
In large bowl, stir together eggs, 1¼ cups cheese and ½ cup bacon bits.
In large nonstick skillet, melt butter over medium heat. Add egg mixture; cook, stirring frequently, 5 to 8 minutes or until eggs are set but still moist.
Meanwhile, wrap tortillas in plastic wrap. Microwave on HIGH (100%) 30 to 60 seconds or until warm.
Spoon egg mixture down center of warm tortillas. Top each with salsa and remaining ¾ cup cheese and bacon bits. Roll up tortillas burrito-style. Serve immediately.
