1 | (6-ounce) package HORMEL® BLACK LABEL® Canadian Bacon, coarsely chopped |
2 | tablespoons olive oil |
1 | medium-size red onion, chopped |
1 | medium-size sweet potato, peeled and cut into ½-inch cubes |
2 | medium turnips, peeled and cut into ½-inch cubes |
1 | pound small fresh Brussels sprouts, quartered |
2 | garlic cloves, sliced |
Directions
Heat oil in 12-inch cast-iron skillet over medium heat. Add bacon, turning occasionally, 8 to 10 minutes or until lightly browned. Remove bacon.
Cook onions and sweet potatoes in hot oil, stirring occasionally, 5 minutes. Add turnips, Brussels sprouts and garlic; cook, stirring occasionally, 8 minutes.
Stir in bacon; add salt and pepper to taste.
