Canadian Bacon-Potato Pancakes

Ingredients

 
1 cup mashed potatoes
1 cup milk
1 large egg, lightly beaten
1¾ cups pancake & baking mix
½ teaspoon kosher salt
1 cup chopped HORMEL® BLACK LABEL® Canadian Bacon
4 tablespoons butter, melted
2 tablespoons chopped fresh chives
Garnish: chopped Canadian bacon, sour cream, chopped fresh chives

Directions

  1. In medium bowl, whisk together mashed potatoes, milk and egg. Stir in baking mix and salt until just blended. Gently fold in Canadian bacon, butter and chives.

  2. Heat griddle to medium heat. Drop batter using a ¼-cup measuring cup. Cook until golden brown, flipping after 2 to 3 minutes.

  3. Garnish with additional Canadian bacon, sour cream and chives, if desired.
