Microwave Bacon, Egg and Avocado Breakfast Sandwich

4 slices HORMEL® BLACK LABEL® Microwave Ready Bacon
Non-stick cooking spray
1 egg
pinch salt
pinch freshly ground pepper
1 tablespoon grated cheddar cheese
1 English muffin, split and toasted
¼ avocado, sliced
Hot sauce, if desired

Directions

  1. Cook bacon according to package directions.

  2. Spray inside of microwave-safe, flat-bottomed bowl or cup roughly the size of your sandwich.

  3. Add egg, salt, pepper, and 2 teaspoons water; mix with fork until combined. Microwave on HIGH 30 seconds. Stir. Microwave 30 seconds or until egg puffs up. Add cheese. Microwave 15 to 30 seconds or until egg is just set and cheese is melted.

  4. Using a small spatula, transfer egg mixture to English muffin half. Top with avocado and bacon. Drizzle with hot sauce, if desired. Top with muffin top.
