
Ingredients
1 | pound orzo, cooked according to package directions |
¾ | cup lemon vinaigrette |
1½ | cups chopped roasted sweet peppers |
8 | ounces mozzarella cheese, preferably fresh, cut into ½-inch pieces |
4 | cups chopped baby arugula leaves |
2 | cups chopped radicchio |
½ | cup HORMEL® Real Bacon Bits |
½ | cup pine nuts, toasted |
Directions
In large bowl, combine hot orzo and vinaigrette; toss. Let stand until room temperature, stirring occasionally. Add peppers, cheese, arugula, radicchio, bacon and toasted pine nuts to orzo mixture. Toss well.
