2 | cups shredded cheddar cheese |
16 | (6-inch) corn tortillas |
1 | cup vegetable oil |
Suggested toppings: shredded lettuce, diced tomato, sliced red onion, sliced radishes, Mexican crema, crumbled queso fresco, salsa |
Directions
In medium bowl, combine chili and cheese.
Place 2 tablespoons chili mixture on each tortilla. Fold in half; secure with toothpicks if needed.
In large skillet over medium-high heat, heat oil. Fry tacos, a few at a time, 2 to 3 minutes or until lightly browned, turning occasionally. Transfer fried tacos to paper-towel-lined tray.
Serve tacos with suggested toppings.
