Ingredients

 
1 tablespoon olive oil
1 small onion, chopped
1 jalapeño pepper, chopped
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon salt
2 (15-ounce) cans HORMEL® Chili with Beans
8 ounces rigatoni pasta, uncooked
1 (15-ounce) can diced tomatoes, undrained
2 cups beef or vegetable broth
1 cup shredded Mexican blend cheese
Suggested toppings: Sour cream, fresh cilantro, extra cheese, sliced fresh chilies and sliced red onion.

Directions

  1. In large skillet over medium heat, heat oil. Add onion and jalapeño pepper. Cook 3 to 4 minutes or until onion is translucent. Stir in garlic, cumin and salt. Cook 1 minute.

  2. Add chili, pasta, undrained tomatoes and broth. Bring mixture to a boil; reduce heat to medium-low. Simmer 12 to 15 minutes or until pasta is tender, stirring occasionally. Stir in cheese.

  3. Serve with suggested toppings.
