Ingredients
1 | tablespoon olive oil |
1 | small onion, chopped |
1 | jalapeño pepper, chopped |
2 | cloves garlic, minced |
1 | teaspoon cumin |
1 | teaspoon salt |
2 | (15-ounce) cans HORMEL® Chili with Beans |
8 | ounces rigatoni pasta, uncooked |
1 | (15-ounce) can diced tomatoes, undrained |
2 | cups beef or vegetable broth |
1 | cup shredded Mexican blend cheese |
Suggested toppings: Sour cream, fresh cilantro, extra cheese, sliced fresh chilies and sliced red onion. |
Directions
In large skillet over medium heat, heat oil. Add onion and jalapeño pepper. Cook 3 to 4 minutes or until onion is translucent. Stir in garlic, cumin and salt. Cook 1 minute.
Add chili, pasta, undrained tomatoes and broth. Bring mixture to a boil; reduce heat to medium-low. Simmer 12 to 15 minutes or until pasta is tender, stirring occasionally. Stir in cheese.
