Ingredients
2 | sweet potatoes, sliced into ¼-inch thick rounds |
1 | tablespoon olive oil |
½ | teaspoon kosher salt |
1 | (14-ounce) can HORMEL® Plant-Based Chili With Beans |
2 | cups shredded pepper jack cheese |
Suggested toppings: Pickled pepper slices, cilantro, diced avocado and chopped pickled red onion |
Directions
Heat oven to 425°F. Line 2 large rimmed baking sheets with parchment paper.
Place sweet potatoes on prepared sheets. Drizzle with olive oil. Sprinkle with salt. Bake 20 to 25 minutes, rotating pans halfway through, or until potatoes are tender and browned.
On oven safe platter, place layer of sweet potato slices. Top with ½ of the chili. Sprinkle with half of the cheese. Repeat with another layer of sweet potatoes, remaining chili and cheese.
Bake 10 to 15 minutes, or until chili is hot and cheese is melted. Serve immediately with suggested toppings.
