Ingredients
1 | small onion, diced |
1 | small sweet potato, cut into ½ inch pieces |
1 | clove garlic, chopped |
1 | pound Brussels sprouts, trimmed and sliced |
salt and pepper, to taste | |
1 | cup HORMEL® CURE 81® Diced Ham |
4 | eggs |
Directions
In a large skillet, cook onion and sweet potato 5-7 minutes or until tender.
Add garlic and cook 1 minute, or until fragrant.
Add Brussels sprouts and cook 5 minutes or until tender. Let stand until bottoms start to caramelize. Stir and let stand 5 minutes.
Season with salt and pepper to taste.
With about 3 minutes left of cooking, add CURE 81® Diced Ham. Create 4 small wells in the hash. Add the eggs and cook until the desired level of doneness.
