Ingredients

 
1 small onion, diced
1 small sweet potato, cut into ½ inch pieces
1 clove garlic, chopped
1 pound Brussels sprouts, trimmed and sliced
salt and pepper, to taste
1 cup HORMEL® CURE 81® Diced Ham
4 eggs

Directions

  1. In a large skillet, cook onion and sweet potato 5-7 minutes or until tender.

  2. Add garlic and cook 1 minute, or until fragrant.

  3. Add Brussels sprouts and cook 5 minutes or until tender. Let stand until bottoms start to caramelize. Stir and let stand 5 minutes.

  4. Season with salt and pepper to taste.

  5. With about 3 minutes left of cooking, add CURE 81® Diced Ham. Create 4 small wells in the hash. Add the eggs and cook until the desired level of doneness.
