Kickstart your day with these convenient, make-ahead Ham and Cheese Breakfast Burritos. Featuring hearty HORMEL® CURE 81® Ham, fluffy scrambled eggs, and melty cheddar cheese, all wrapped in a soft flour tortilla. Perfectly portioned for a quick and satisfying meal on the go.
Ingredients
2 | cups diced HORMEL® CURE 81® Ham |
12 | eggs |
¼ | cup whole milk |
½ | teaspoon kosher salt |
¼ | teaspoon black pepper |
2 | tablespoons butter |
12 | (12-inch) squares foil |
12 | (10 to 12-inch) flour tortillas, at room temperature |
1½ | cups shredded cheddar cheese, divided |
Directions
Spray a large nonstick skillet with nonstick cooking spray. Heat pan over medium-high heat. Cook ham 4 to 5 minutes or until browned. Set aside.
In large bowl, whisk together eggs, milk, salt, and pepper.
In large skillet over medium heat, melt butter. Add egg mixture. Cook, stirring, 2 to 3 minutes or until almost set. Stir in ham.
On each foil square place 1 tortilla. Sprinkle each tortilla down the middle with 2 tablespoons cheese. Top each with equal portions of egg and ham mixture.
Roll up burritos and wrap in foil. Freeze burritos in a single layer on a baking sheet. Transfer them to gallon sized zip-top freezer bags.
To reheat: warm in oven or microwave. To microwave: remove from foil and over with paper towel. Microwave at Medium (50%) 2 minutes, turning halfway through.
