Kickstart your day with these convenient, make-ahead Ham and Cheese Breakfast Burritos. Featuring hearty HORMEL® CURE 81® Ham, fluffy scrambled eggs, and melty cheddar cheese, all wrapped in a soft flour tortilla. Perfectly portioned for a quick and satisfying meal on the go.

2 cups diced HORMEL® CURE 81® Ham
12 eggs
¼ cup whole milk
½ teaspoon kosher salt
¼ teaspoon black pepper
2 tablespoons butter
12 (12-inch) squares foil
12 (10 to 12-inch) flour tortillas, at room temperature
1½ cups shredded cheddar cheese, divided

Directions

  1. Spray a large nonstick skillet with nonstick cooking spray. Heat pan over medium-high heat. Cook ham 4 to 5 minutes or until browned. Set aside.

  2. In large bowl, whisk together eggs, milk, salt, and pepper.

  3. In large skillet over medium heat, melt butter. Add egg mixture. Cook, stirring, 2 to 3 minutes or until almost set. Stir in ham.

  4. On each foil square place 1 tortilla. Sprinkle each tortilla down the middle with 2 tablespoons cheese. Top each with equal portions of egg and ham mixture.

  5. Roll up burritos and wrap in foil. Freeze burritos in a single layer on a baking sheet. Transfer them to gallon sized zip-top freezer bags.

  6. To reheat: warm in oven or microwave. To microwave: remove from foil and over with paper towel. Microwave at Medium (50%) 2 minutes, turning halfway through.
