The Ham and Potato Breakfast Bake is an easy and filling dish of tender diced red potatoes, savory HORMEL® CURE 81® Classic Boneless Ham, aromatic onions and garlic, and perfectly cooked eggs. This flavorful breakfast casserole is an excellent option to make in advance and feed a crowd.
Ingredients
2 | pounds red potatoes, diced |
1 | small/medium sweet yellow onion, small chopped |
4 | cloves garlic, minced |
1 | pound cooked HORMEL® CURE 81® Classic Boneless Ham, small chopped |
olive oil | |
salt and pepper | |
6 | eggs |
Directions
Place potatoes, onion, garlic and ham in an oven-safe/broiler-safe covered dish.
Drizzle lightly with olive oil and sprinkle with salt and pepper. Toss to coat evenly.
Cover and bake on the middle rack at 425 degrees for 30 minutes. Uncover and turn on broiler for 3-5 minutes, until potatoes are browning.
Crack eggs over potatoes and return to broiler for an additional 2-3 minutes, until eggs are cooked to your liking.
