
Ingredients
2 | sweet potatoes, scrubbed |
3 | tablespoons orange juice |
4 | whole wheat thin sandwich rolls, split and toasted |
1 | cup shredded mozzarella cheese |
2 | ounces shaved HORMEL® CURE 81® Classic Boneless Ham |
½ | cup baby spinach leaves |
Sour cherry jam, warmed |
Directions
Using a fork, pierce sweet potatoes 3 or 4 times. Microwave 6 minutes or until tender, rearranging once. Cool slightly. Cut potatoes in half. Scoop pulp into bowl; add orange juice. Mash until smooth.
Heat broiler. Spread mashed sweet potato mixture on roll halves. Top with cheese and ham. Broil 3 to 5 minutes or until cheese is melted and starts to brown. Before serving, drizzle each flatbread with cherry jam and top with spinach leaves.
