Ingredients

 
1 (1.25-pound) package HORMEL® Original Pork Tenderloin
¾ teaspoon kosher salt, divided
¼ teaspoon freshly ground pepper
8 slices HORMEL® BLACK LABEL® Jalapeño Bacon
2 cups chopped fresh cilantro
3 jalapeño peppers, sliced
3 tablespoons fresh lime juice
¼ cup olive oil

Directions

  1. Season tenderloin with ½ teaspoon salt and pepper. Wrap bacon slices around tenderloin, securing with wooden picks.

  2. Grill over medium heat 8 to 10 minutes on each side or until internal temperature reaches 145°. Loosely cover and let stand 10 minutes.

  3. Add jalapeños to grill; grill 3 minutes on each side or until charred and softened.

  4. In food processor, combine remaining ingredients and jalapeños and process until smooth. Slice pork and serve with jalapeño chimichurri.
