These bite-sized Bacon-Wrapped Pork Roll-Ups are a blend of sweet and smoky flavors. They travel well in a lunchbox, to a potluck, or right to your dining room table!

Ingredients

 
1 HORMEL® Original Pork Tenderloin (2 slices about ½-inch thick)
½ teaspoon steak seasoning
2 cups baby spinach leaves
1½ cups roasted red peppers
1 string mozzarella cheese, divided in half lengthwise
3 strips HORMEL® BLACK LABEL® Bacon

Directions

  1. Heat oven to 425° F.

  2. Pound pork loin slices with meat mallet until about ¼-inch thick. Sprinkle steak seasoning evenly on one side. Place spinach leaves in one layer on pork slices. Repeat with roasted red peppers. Place mozzarella cheese string on one end and roll up. Wrap with bacon and secure ends with wooden picks.

  3. Place pork rolls on parchment-paper-lined baking sheet. Bake 30 to 35 minutes, or until cooked through and bacon is crisp. Transfer to paper-towel-lined plate to absorb excess grease. Cool slightly and cut into ½-inch slices.
