1 pound HORMEL® Original Pork Loin Filet, cut into 1-inch cubes
1 teaspoon salt
½ teaspoon pepper
1 medium onion, chopped
1 tablespoon canola oil
3 cups reduced-sodium chicken broth
½ small butternut squash, peeled and cubed
2 medium carrots, sliced
1 can (14.5 ounces) diced tomatoes with mild green chilies, undrained
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano

Directions

  1. Season pork with salt and pepper. In a large skillet, heat oil over medium-high and brown pork in 2 batches.

  2. Transfer pork to a 5-quart slow cooker and add remaining ingredients. Cover and cook on low 8 hours.
