Ingredients
1 | pound HORMEL® Original Pork Loin Filet, cut into 1-inch cubes |
1 | teaspoon salt |
½ | teaspoon pepper |
1 | medium onion, chopped |
1 | tablespoon canola oil |
3 | cups reduced-sodium chicken broth |
½ | small butternut squash, peeled and cubed |
2 | medium carrots, sliced |
1 | can (14.5 ounces) diced tomatoes with mild green chilies, undrained |
1 | tablespoon chili powder |
1 | teaspoon ground cumin |
1 | teaspoon dried oregano |
Directions
Season pork with salt and pepper. In a large skillet, heat oil over medium-high and brown pork in 2 batches.
Transfer pork to a 5-quart slow cooker and add remaining ingredients. Cover and cook on low 8 hours.
