Ingredients

1 (1-pound) HORMEL® Original Pork Loin Filet
1 teaspoon kosher salt
1 teaspoon ground chili powder
1 teaspoon ground cumin
1 large onion, sliced
2 cloves garlic, sliced
½ cup amber beer
4 large flour tortillas
Garnish: avocado, fresh cilantro leaves, sour cream, jalapeño slices

Directions

  1. Season pork with salt, chili powder and cumin. Place onion slices and garlic in bottom of 4- to 6-quart slow cooker. Pour in beer and place pork over onions. Cover and cook on HIGH 4 hours or LOW for 6 to 8 hours. Shred meat with 2 forks in cooking liquid.

  2. Heat oven to 350°F.

  3. Using a 3½-inch biscuit cutter, cut tortillas into 12 smaller circles. Press each tortilla into lightly greased muffin tin cups. Lightly spray with cooking spray.

  4. Bake 10 to 15 minutes or until lightly browned. Cool completely.

  5. Spoon pork mixture into baked tortillas. Garnish with desired toppings, if desired.
