12 eggs
2 (14-ounce) cans HORMEL® MARY KITCHEN® Corned Beef Hash
12 CHI-CHI’S® 10-inch flour tortillas
salt and pepper to taste
2 cups shredded cheese
2 cups CHI-CHI’S® salsa
2 green bell peppers, sliced
1 onion, chopped
sour cream, as desired
HORMEL® Real Bacon Pieces

Directions

  1. Heat grill to medium heat. Scramble eggs in cast iron skillet. Push eggs to one side of skillet and add hash until hot. Add salt and pepper to taste.

  2. To heat tortillas, wrap in tin foil and let sit on the grill 1 minute or until warm.

  3. Lay tortillas on a plate and spoon heated eggs and hash mixture. Top with cheese, salsa, peppers, onion, sour cream and bacon pieces, if desired.
