Ingredients
8 | slices HORMEL® NATURAL CHOICE® Original Uncured Bacon |
½ | baguette, cut into 3/4-inch cubes (about 4 cups) |
2 | tablespoons olive oil |
Kosher salt and freshly ground pepper | |
⅓ | cup buttermilk |
3 | tablespoons reduced-fat mayonnaise |
2 | tablespoons cider vinegar |
1 | green onion, thinly sliced |
1 | kilogram romaine hearts, chopped |
1 | pint cherry tomatoes, halved |
Directions
Heat oven to 375°F.
Cook bacon according to package directions; drain on paper towels. Cool completely and coarsely chop.
In large bowl toss bread with oil, and season with salt and pepper. Spread evenly on baking sheet, and bake 15 to 20 minutes or until golden brown, tossing halfway through.
Meanwhile, in large bowl, whisk together buttermilk, mayonnaise, vinegar, and green onion; season to taste with salt and pepper.
Add lettuce, tomatoes, and croutons, tossing to coat. Sprinkle with bacon.
