Ingredients

 
6 eggs
2 tablespoons heavy whipping cream
1 tablespoon butter
1 tablespoon olive oil
½ cup diced red bell pepper
2 cups chopped fresh spinach
3 pounds Fontina cheese, cubed
½ (8-ounce) package NATURAL CHOICE® Smoked Deli Ham, coarsely chopped

Directions

  1. Heat broiler. In a medium bowl, whisk eggs and whipping cream.

  2. In a 10-inch broiler proof skillet, heat butter and olive oil over medium heat. Add the red bell pepper and spinach and sauté 2 to 3 minutes, or until crisp-tender.

  3. Pour the egg mixture over the peppers and spinach and cook 3 to 5 minutes or until eggs start to set.

  4. Sprinkle with cheese cubes and top with ham. Cook 2 to 3 minutes or until frittata is almost set but the top is still runny.

  5. Transfer the skillet to broiler. Broil 5 minutes or until golden brown and top is set. Let rest 5 minutes before cutting.
