6 eggs
½ cup milk
Salt and pepper to taste
8 ounces frozen cut leaf spinach, thawed and squeezed dry
½ cup chopped roasted red bell peppers
6 English muffins, split
6 slices cheddar cheese
1 (8-ounce) package HORMEL® NATURAL CHOICE® Smoked Deli Turkey

Directions

  1. Heat oven to 350°F. Lightly spray 7×11-inch baking pan with nonstick cooking spray.

  2. In bowl, whisk together the eggs, milk, salt, and pepper. Stir in spinach and peppers.

  3. Pour egg mixture into prepared pan. Bake 25 to 30 minutes, or until center is set and the outer edges are lightly browned. Allow eggs to cool. Slice into six pieces.

  4. Top bottom halves of English muffins with 1 egg slice, one cheese slice and 2 to 3 slices of turkey. Cover each with muffin tops. Wrap each sandwich in foil or plastic wrap. Place all sandwiches in freezer bag. Freeze for up to 2 months.

  5. To reheat, remove from foil or plastic wrap, and cover with paper towel. Microwave at Medium (50%) 2 minutes, turning halfway through.

  6. Alternatively, sandwiches can be thawed in refrigerator overnight. Unwrap and cover with paper towel. Microwave on high until heated through.
