Vinaigrette
½ cup olive oil
cup apple cider vinegar
1 tablespoon lemon juice
1 teaspoon lemon zest
1 clove garlic, minced
1 teaspoon oregano
1 teaspoon Dijon mustard
Salt and pepper to taste
Salad
2 cups baby kale
1 cup cooked quinoa
1 red bell pepper, diced
1 yellow bell pepper, diced
¼ cup chopped sundried tomatoes
¼ cup diced red onion
1 (8-ounce) package HORMEL® NATURAL CHOICE® Smoked Deli Turkey, sliced and rolled into bite sized pieces

Directions

For the Vinaigrette

  1. In small bowl whisk together Vinaigrette ingredients.

For the Salad

  1. In large bowl, combine kale, quinoa, bell peppers, sundried tomatoes and red onion.

  2. Pour vinaigrette over salad. Toss to coat.

  3. Top salad with smoked turkey.
