These Turkey and Soft Boiled Egg Salad Toasts make for a delightful and satisfying appetizer or simple meal. Combining creamy egg salad with the savory taste of applewood smoked turkey, and the freshness of mixed greens and herbs, these toasts offer a delicious blend of textures and flavors.
Ingredients
12 | eggs |
½ | cup mayonnaise |
3 | tablespoons country style Dijon mustard |
Salt and pepper, to taste | |
12 | slices rustic bread, toasted |
2 | (8-ounce) packages HORMEL® NATURAL CHOICE® Applewood Smoked Deli Turkey |
Mixed green and herbs for serving | |
Freshly crack black pepper and flaky sea salt for serving |
Directions
In large saucepan place eggs. Add cold water to cover. Bring to boil over high heat. Reduce heat to boil gently for 6 minutes. Drain. Place eggs in bowl of ice water. Let stand until cool enough to handle. Peel and quarter.
In large bowl, combine mayonnaise, mustard, salt and pepper. Add eggs. Toss together gently.
To serve; layer turkey, greens and egg salad on toasted bread. Top with additional greens. Sprinkle with cracked black pepper and flaky sea salt.
