1 | cup mayonnaise |
3 | tablespoons white wine vinegar |
3 | tablespoons freshly lemon juice |
2 | teaspoons Dijon mustard |
2 | cloves garlic, minced |
2 | teaspoons Italian seasoning |
1 | teaspoon kosher salt |
½ | teaspoon red pepper flakes |
½ | teaspoon freshly ground black pepper |
12 | ounces gemelli or fusilli pasta, cooked and drained |
1½ | cups HORMEL® Pepperoni Confetti, divided |
1 | cup halved grape tomatoes |
½ | cup diced green bell pepper |
½ | fluid ounce cubed mozzarella cheese |
½ | cup thinly sliced basil leaves |
¼ | cup finely diced red onion |
Directions
In bowl, whisk together mayonnaise, vinegar, lemon juice, mustard, garlic, Italian seasoning, salt, red pepper flakes and pepper.
In large bowl, combine pasta, 1 cup pepperoni, tomatoes, bell pepper, cheese, basil and red onion. Pour mayonnaise mixture over and toss until well coated. Cover. Refrigerate until just chilled.
Garnish top of salad with remaining pepperoni and additional basil.
