4 large baking potatoes, scrubbed and pierced with fork
2 tablespoons olive oil, divided
Salt and pepper, to taste
1 cup chopped onion
1 cup sliced mushrooms
1 (5-ounce) bag HORMEL® Diced Pepperoni, divided
1 (8-ounce) can tomato sauce`
½ teaspoon Italian seasoning
1 cup shredded mozzarella

Directions

    1. Heat oven to 425°F. Line a baking sheet with parchment paper.
    2. Rub potatoes with 1 tablespoon olive oil and sprinkle with salt and the pepper. Place potatoes in microwave on paper towel. Microwave 8 to 10 minutes, or until just tender.
    3. Carefully transfer potatoes to prepared baking sheet. Bake 10 to 15 minutes, until skins are crisp.
    4. In large skillet over medium-high heat, heat remaining oil. Cook onion and mushrooms 4 to 5 minutes, stirring occasionally, until soft and beginning to brown.
    5. Stir in ¾ cup pepperoni, tomato sauce, and Italian seasoning. Season to taste with salt and pepper.
    6. Heat broiler to HIGH. Cut slits in tops of each potato and gently pull to open. With fork, fluff insides of potatoes. Fill each potato with ¼ pepperoni mixture. Top each potato with cheese and remaining pepperoni.
    7. Broil 3 to 4 minutes, or until cheese has melted and starts to brown and pepperoni is crisp.
