4 | large baking potatoes, scrubbed and pierced with fork |
2 | tablespoons olive oil, divided |
Salt and pepper, to taste | |
1 | cup chopped onion |
1 | cup sliced mushrooms |
1 | (5-ounce) bag HORMEL® Diced Pepperoni, divided |
1 | (8-ounce) can tomato sauce` |
½ | teaspoon Italian seasoning |
1 | cup shredded mozzarella |
Directions
- Heat oven to 425°F. Line a baking sheet with parchment paper.
- Rub potatoes with 1 tablespoon olive oil and sprinkle with salt and the pepper. Place potatoes in microwave on paper towel. Microwave 8 to 10 minutes, or until just tender.
- Carefully transfer potatoes to prepared baking sheet. Bake 10 to 15 minutes, until skins are crisp.
- In large skillet over medium-high heat, heat remaining oil. Cook onion and mushrooms 4 to 5 minutes, stirring occasionally, until soft and beginning to brown.
- Stir in ¾ cup pepperoni, tomato sauce, and Italian seasoning. Season to taste with salt and pepper.
- Heat broiler to HIGH. Cut slits in tops of each potato and gently pull to open. With fork, fluff insides of potatoes. Fill each potato with ¼ pepperoni mixture. Top each potato with cheese and remaining pepperoni.
- Broil 3 to 4 minutes, or until cheese has melted and starts to brown and pepperoni is crisp.
