This deliciously satisfying breakfast combines crispy pepperoni, fluffy scrambled eggs, and gooey mozzarella cheese, all wrapped in a warm, soft tortilla. Ingredients
1 burrito
10 | slices HORMEL® Pepperoni |
3 | tablespoons butter, divided |
2 | tablespoons diced green bell pepper |
3 | eggs, lightly beaten |
¼ | cup shredded mozzarella cheese |
1 | large flour tortilla |
Directions
In medium skillet over medium heat place pepperoni slices. Cook 30 to 40 seconds, flipping halfway through, until pepperoni is crisped. Remove from pan.
In same skillet, add 1 tablespoon butter. Cook green peppers 1 to 2 minutes or until beginning to soften. Remove from pan.
In same skillet, melt remaining butter. Scramble eggs.
Layer eggs, peppers, pepperoni and cheese on tortilla. Roll up to serve.
