Pepperoni Egg Bites are the perfect easy breakfast option, packed with flavor. Made with crispy HORMEL® Pepperoni Confetti, sautéed vegetables, and cheddar cheese, these egg bites are a satisfying start to your day. Simply bake and enjoy for a quick, meal on the go.
Ingredients
½ | cup HORMEL® Pepperoni Confetti |
1 | small onion, chopped |
1 | orange bell pepper, chopped |
2 | cups chopped baby spinach |
6 | eggs |
3 | tablespoons milk |
½ | teaspoon garlic powder |
Kosher salt | |
Freshly ground black pepper | |
½ | cup shredded cheddar cheese |
Chopped green onions, for garnish if desired |
Directions
Heat oven to 350°F. Spray a 12-cup nonstick or silicone muffin pan with nonstick cooking spray.
In large nonstick skillet over medium heat, cook pepperoni 3 to 4 minutes or until crispy. Remove from skillet.
Add onion and bell pepper to skillet. Cook 3 to 5 minutes or until softened. Add spinach. Cook 1 to 2 minutes, or until wilted.
In bowl, whisk eggs, milk and garlic powder. Season with salt and pepper. Stir in vegetable mixture, pepperoni and cheese. Pour mixture into prepared muffin tin.
Bake 30 to 35 minutes, or until cooked through and golden brown. Remove from pan. Sprinkle with green onions if desired.
