2 | romaine hearts, roughly chopped |
2 | Roma tomatoes, diced |
1 | green bell pepper, cored and diced |
½ | small red onion, diced |
½ | cup sliced black olives |
½ | cup shredded Parmesan cheese |
Red Wine Vinaigrette | |
⅓ | cup olive oil |
3 | tablespoons red wine vinegar |
2 | small garlic cloves, pressed or minced (or 1 teaspoon garlic powder) |
2 | teaspoons Dijon mustard |
1 | teaspoon salt |
½ | teaspoon freshly cracked black pepper |
Directions
For the Red Wine Vinaigrette
In small bowl, whisk together ingredients.
For the Salad
In skillet over medium-high heat cook pepperoni 2 to 3 minutes, tossing in pan, or until crisped. Remove from skillet to paper towel lined plate. Reserve.
In large bowl, combine romaine, tomatoes, bell pepper, red onion, olives and cheese. Toss with Red Wine Vinaigrette. Top individual salads with reserved pepperoni.
