1 | (14.5 ounce) can refried beans |
½ | teaspoon ground cumin |
¼ | teaspoon ancho chili powder |
Salt and pepper to taste | |
8 | taco sized flour tortillas, warmed |
4 | eggs, scrambled |
1 | cup shredded Mexican blend cheese |
1 | (5-ounce) package HORMEL® Jalapeno Pepperoni |
Pico de Gallo | |
Sliced jalapenos |
Directions
- In small saucepan over medium heat warm refried beans. Stir in cumin and ancho chili powder. Season to taste with salt and pepper. Cook 4 to 5 minutes or until hot.
- Place a spoonful of beans in center of each tortilla. Layer each with scrambled eggs, cheese and pepperoni.
- Serve with Pico de Gallo and sliced jalapenos.
