Ingredients
1½ | cups whole milk ricotta cheese |
½ | cup grated parmesan |
½ | teaspoon salt |
½ | teaspoon pepper |
¼ | teaspoon crushed red pepper flakes |
¼ | teaspoon oregano |
¼ | cup chopped fresh basil |
1 | pound pizza dough, divided into 2 balls; room temperature |
4 | ounces shredded mozzarella, divided |
1 | cup chopped HORMEL® Pepperoni, divided |
½ | cup sautéed mushrooms, divided |
1 | egg, lightly beaten |
Marinara sauce, warmed for serving |
Directions
Heat oven to 500°F.
In bowl, combine ricotta, grated parmesan, salt, pepper, red pepper flakes and dried oregano. Stir in basil.
On floured work surface, roll out one dough ball to 12-inch circle. Top one side of dough circle with half each of the ricotta mixture, shredded mozzarella, pepperoni and mushrooms. Fold dough over filling; crimp edges to seal. Repeat with remaining ingredients to create 2 calzones. Transfer to baking sheet.
Brush tops with beaten egg. Cut a few small vent holes on top. Bake 15 to 20 minutes, or until deep golden brown. Serve with marinara.
