Ingredients

 
1½ cups whole milk ricotta cheese
½ cup grated parmesan
½ teaspoon salt
½ teaspoon pepper
¼ teaspoon crushed red pepper flakes
¼ teaspoon oregano
¼ cup chopped fresh basil
1 pound pizza dough, divided into 2 balls; room temperature
4 ounces shredded mozzarella, divided
1 cup chopped HORMEL® Pepperoni, divided
½ cup sautéed mushrooms, divided
1 egg, lightly beaten
Marinara sauce, warmed for serving

Directions

  1. Heat oven to 500°F.

  2. In bowl, combine ricotta, grated parmesan, salt, pepper, red pepper flakes and dried oregano. Stir in basil.

  3. On floured work surface, roll out one dough ball to 12-inch circle. Top one side of dough circle with half each of the ricotta mixture, shredded mozzarella, pepperoni and mushrooms. Fold dough over filling; crimp edges to seal. Repeat with remaining ingredients to create 2 calzones. Transfer to baking sheet.

  4. Brush tops with beaten egg. Cut a few small vent holes on top. Bake 15 to 20 minutes, or until deep golden brown. Serve with marinara.
