Ingredients

Vinaigrette
¼ cup olive oil
2 tablespoons fresh lemon juice
½ teaspoon salt
½ teaspoon Italian seasoning
Salad
4 cups spinach
1 cup HORMEL® Pepperoni, roughly chopped if desired
1 cup mixed cherry tomatoes, halved
1 cup cubed mozzarella cheese
¼ cup thinly sliced red onion

Directions

For the Vinaigrette

  1. In small jar, combine Vinaigrette ingredients. Cover jar and shake until combined.

For the Salad

  1. In large bowl, combine spinach, pepperoni, tomatoes, cheese and onion.

  2. Toss salad with vinaigrette. Serve immediately.
