3 | tablespoons olive oil |
1 | (5-ounce) package HORMEL® Diced Pepperoni |
1 | cup panko breadcrumbs |
1 | teaspoon garlic powder |
1 | teaspoon Italian seasoning |
Salt, pepper and red pepper flakes, to taste | |
1 | cup ranch dressing |
2 | tablespoons pizza sauce |
12 | ounces salad mix, such as romaine, iceberg, red cabbage, and shredded carrots |
¼ | cup sliced pepperoncini peppers |
¼ | cup sliced black olives |
¼ | cup thinly sliced red onion |
Directions
- In skillet over medium-high heat, add olive oil and pepperoni. Cook, stirring frequently, 4 to 5 minutes until pepperoni is rendered and crisp. Remove pepperoni with a slotted spoon and transfer to a paper towel lined plate.
- Return skillet with oil to medium heat. Add breadcrumbs. Cook, stirring frequently, 4 to 5 minutes, or until browned and toasted. Remove from heat. Add garlic powder and Italian seasoning. Add crisped pepperoni and stir until evenly combined. Season with salt, pepper and red pepper flakes to taste.
- In small bowl, combine ranch dressing and pizza sauce.
- In individual serving bowls, combine salad mix with pepperoncini, olives and red onions. Top each with pepperoni breadcrumbs and dressing mixture.
