Ingredients

 
½ cup chopped HORMEL® Turkey Pepperoni
1 small onion, chopped
1 red bell pepper, chopped
2 cups chopped baby spinach
6 eggs
3 tablespoons milk
¼ teaspoon paprika
½ teaspoon garlic powder
Kosher salt
Freshly ground black pepper
½ cup shredded mozzarella

Directions

  1. Heat oven to 350°F. Spray a 12-cup muffin tin with nonstick cooking spray.

  2. In large nonstick skillet over medium heat, cook turkey pepperoni 3 to 4 minutes or until crispy. Remove from skillet.

  3. Add onion and bell pepper to skillet. Cook 3 to 5 minutes or until softened. Add spinach. Cook 1 to 2 minutes, or until wilted.

  4. In bowl, whisk eggs, milk, paprika, and garlic powder. Season with salt and pepper. Stir in vegetable mixture, turkey bacon, and mozzarella. Pour mixture into prepared muffin tin.

  5. Bake 30 to 35 minutes, or until cooked through and golden brown. Remove from pan.
