Breakfast will never be the same when you use HORMEL® SQUARE TABLE™ Meatloaf with Tomato Sauce to create Meatloaf Skillet Hash and Eggs. This tasty combination of meat and potatoes is easy to make and even easier to eat.
Ingredients
2 | tablespoons oil |
2 | russet potatoes, cut into large dice |
1 | medium onion, cut into large dice |
1 | red bell pepper, chopped |
1 | tablespoon butter |
1 | clove garlic, chopped |
1 | (15-ounce) package HORMEL® SQUARE TABLE™ Fully Cooked Meatloaf with Tomato Sauce, chopped |
Salt and pepper, to taste | |
4 | fried eggs |
Hot sauce, for serving |
Directions
Heat large cast iron, or heavy bottomed skillet over medium-high heat. Add oil. Swirl to coat pan. Add potatoes. Cook 5 to 10 minutes or until lightly browned.
Stir in butter and garlic. Add chopped meatloaf. Cook 3 to 4 minutes or until meatloaf is crisped. Season to taste with salt and pepper.
Top individual servings with an egg. Serve with hot sauce.
