1 Japanese eggplant
1 zucchini
8 ounces shiitake mushrooms
1 bell pepper
12 shishito peppers
16 cherry tomatoes
1 red onion
8 spears asparagus
1 (12-ounce) bottle HOUSE OF TSANG® Teriyaki Stir-Fry Sauce
Serve with rice and pickled cucumber salad, if desired

Directions

  1. Cut vegetables into even bite-sized pieces that are easy to thread onto skewers.

  2. Thread 4 to 6 pieces of vegetables onto skewers.

  3. Prepare grill for medium-high heat.

  4. Grill skewers, flipping occasionally 5 to 8 minutes, or until vegetables are tender and slightly charred.

  5. Brush the skewers generously with teriyaki. Continue to grill 1 to 2 more minutes or until sauce caramelizes slightly.

  6. Serve with rice and pickled cucumber salad, if desired.
