2 small spaghetti squash
1 tablespoon olive oil
1 (16-ounce) package LLOYD’S® Seasoned & Shredded Pork In Original BBQ Sauce
1 cup shredded mozzarella cheese
¼ cup sliced red onion
Chopped cilantro

Directions

  1. Heat oven to 400°F.

  2. Cut squash in half. Scoop out seeds. Drizzle with olive oil. Place squash halves cut side down on baking sheet. Bake 35 to 40 minutes or until the squash is tender.

  3. Heat broiler to high.

  4. Top each squash half with ½ cup pork, ¼ cup cheese, and 1 tablespoon onion slices.

  5. Broil 5 to 6 minutes or until cheese is melted and lightly browned. Garnish with cilantro.
