Chipotle chicken nacho bites are an easy and delicious appetizer that are perfect for any occasion.
Ingredients
1 | tablespoon olive oil |
¼ | cup chopped red onion |
⅓ | cup tomato salsa |
2 | teaspoons chipotle chili powder |
1 | (10-ounce) can VALLEY FRESH® 100% Natural* Chicken Breast, drained |
24 | corn tortilla chips |
1½ | cups shredded Monterey Jack or Mexican blend cheese |
½ | cup sour cream |
1 | tablespoon lime juice |
Directions
Heat oven to 400℉. In large skillet, heat oil over medium-high heat. Sauté onion about 3 minutes or until tender. Stir in salsa, chili powder and chicken; cook and stir until warmed through.
Arrange chips in a single layer on a large sheet pan, lined with parchment. Sprinkle each chip with cheese and a small spoonful of the chicken mixture.
Bake 3 to 4 minutes or until cheese is melted. Mix sour cream and lime juice. Top each chip with a dollop of sour cream mixture and a cilantro leaf.
